or maybe they are just saying "Hey, i dont do this thing that youre accusing all men of doing. if i said "all gays are shady and bitchy" and you say "not all gays are like that", its a perfectly acceptable response

then ****ing say that. do you honestly expect people to automatically understand and infer that long message from you saying "men are horrible". Instead of saying "men are horrible", you could say "the way some men act is horrible" and then maybe go into detail. What youre doing is a cop out: i could say "muslims are horrible people" but what i actually mean is that "the teaching of islam reinforces intolerance and sexism that often clashes with modern ideas and western society.". like just say what you actually mean.

absolute statements are absolute. Saying "men are horrible" is a generalization because it makes the interpretation that you are referring to all men since you didnt give a quantity or specify which/what men you are talking about. saying i hate dogs implies all dogs. saying i hate big dogs clearly means i hate only big dogs not small dogs.
