Even though I play competitively, I've never played through the story with concern for natures, ivs, EVs or moves. It's not very convenient when you're just trying to enjoy the game. Afterwards, it's like a completely different game experience to actually put some thought into them.

For your Grass-type dilemma, I'd try Roserade if you could get a Shiny stone. Breloom is also king, I always use him as my staple Grass-type in RSE run throughs.
