This Is How We Do is basically the only single that is ****.
All of her other singles were "appropriate" for her age. You might get into Dark Horse but the big thing here is, if it wasn't for the video, the song wouldn't be categorized as immature. I agree that the music video is a huge let down, but without that, you wouldn't be complaining how immature the song is.
Roar, Unconditionally and Birthday are pretty alright. They weren't immature.
TIHWD is though. I like the song but I cringe because of the horrible song writing.

Also, one look at her PWT costumes should also tell you why people tell her to grow up.
Pig tails, smiley faced bras, glitter, flower pots, a costume with a tail hanging out, Birthday performance outfit etc.
Its just all so incredibly childish.

The examples in the OP maybe except Gwen Stefani doesn't validate your point that Katy is being immature and childish. You could have talked about Janet, Mariah, Whitney, Kylie etc. who got matured but still managed to stay sexy and young in their 40s.
J.Lo is 40 something and shaking her booty with the newbies shamelessly, that's not childish but that's something different which should be criticized.

What?! A musician has a genre of music they enjoy?! That must be the first time that this has ever happened.
I mean, you don't see Gaga or Rihanna always releasing dance-po.... Oh. Well, at least P!nk and Kelly don't focus only on Pop-r.... Oh. Maybe it is a common thing after all?
Besides, Teenage Dream is barely pop-rock.

Have you not heard the cliche-infested lyrics of Roar?
Or the music video of Birthday, where Katy is jumping around with 5 yr olds in a Barbie costume?

I actually find this to be true as well. My niece turns 7 in December and she comes home from school every day and listens to Roar and Let It Go on repeat - people can say "LOL! OMG! SO childish!" all they like, but, she's a kid and she loves it. She has a jungle girl costume and an Elsa costume that she always wears and she dances around the house singing those two songs over and over and over. All the while she has absolutely no idea who Rihanna or Lady Gaga are. Granted, she's only 6 years old, so she's not paying a massive amount of attention to pop culture. But my point is, in 12 years time, she's going to be in her final year of high school, and she will probably look at Roar and Katy Perry's discography with the same amount of love that my friends and I look at 'Baby One More Time' and instantly remember when we were in Year 2 and it was the song that was everywhere. And 12 years from now, my niece will probably still check for Katy Perry, because she was the first artist she fell in love with...as a child.
That's the thing about children. They're the adults of tomorrow. And appealing to the adults of tomorrow only enhances your chances of longevity in my opinion. If you have a niche target market, then you'll only appeal to that niche audience as they get older, rather than expanding your audience.

Roar is a self-empowerment anthem. Only 5 year old kids have obstacles in their lives?

Fergie also had cliche-infested lyrics during The Dutchess era. London Bridge and Fergalicious alone were kinda Gwen rip-offs. J.Lo has been singing about clubbing, dancing, booty-shaking since like 2005.

Gwen Stefani released music videos at the age of 35 that were 'Alice in Wonderland' themed and another one that featured Bratz dolls. If Katy did that at 29/30, she would get absolutely crucified on ATRL.
edit: I LOVE Gwen btw, I just wanted to point it out that Katy would never hear the end of this if she did anything remotely similar.

The song itself is not immature. But there is a problem with Katy that she is able to make any given song into cheesy childish thing. Roar, Dark Horse, Birthday could have adult videos but they were promoted as kid bopz with their videos and performances.

In regards to Birthday, I was talking about the music video not the lyrics.
Granted the lyrics are mature, but what kind of imagery did she serve up for that song? Exactly.

What an insightful thought!
So Katy's also investing in the longevity of her career by appealing to children, all the while reaping the benefits of being a current popular act in 2014, breaking records left and right, gaining in star power by the day etc. Genius, tbh! I bet other pop girls wish they'd thought of that.
