That's what time she writes a lot of her songs; she's up late thinking about things and can't sleep and so she writes. Notice how in Enchanted, The Way I Loved You and Breathe the 2am references are all about intense emotional situations that would've kept her from sleeping.
I think the Tuesdays are actually because both of those things happened on Tuesdays, although they're obviously about entirely unrelated events.
