I don't think Mallow is gonna have Rowlet. Misty was a water specialist and that didn't stop Ash from getting both Squirtle and Totodile.

Honestly I hope Serena follows Ash to Alola. She's so in love with him and she's actually pleasant and her team is fabulous too and I could see her adding a Comfey to it. Also, it'd just be nice to see him travel with two girls this time.

Honestly just keep the anime how it is if it works for the merch selling/brand. But give the fans an origin style spin off on a streaming service, with characters with brains, real story arcs, fully evolved teams for gyms etc.
