Pretty sure you can't train a dog if you don't hit it a couple of times. It won't understand "no" or "stop doing that" or "bad dog!". Please don't tell me how to raise my dog, I've had 3, lol. Plus, my dogs are extremely loyal and smart.
It could have been the stress of being an SPCA cat that made them extremely difficult to deal with; however, I also got my dogs from the SPCA. My cat would sit on the window all day until I fed her. If I ever bothered to touch her without food in my hands she would hiss or bite me. When I would eat, she would come and rub on me until I gave her something from my plate. If she saw that my plate was empty, she'd just leave.
They're just not interested in people. I'm glad you love your cat but I always had a hard time with them. To this day I'll never go out of my way to touch someone's cat. Actually, I usually avoid them at all costs, allergies aside.
