Can anyone help me read this? I've always been interested in astrology but I don't even know what mine various plans and signs mean

There's tons of info you can find by just googling your placements. Start with your Sun in Aries, Moon in Leo, and Leo rising. Your chart is essentially a snapshot of where all the planets were positioned at the time of your birth. The list on the right is your house cusps, showing where each section of your chart begins, and what sign is ruling over each house. You seem to be a very fiery personality type, so begin by learning about the fire signs.

All those Cancer placements. You have a stellium! Mercury in Virgo and Moon in Cancer are comfortable placements. Is your mercury in the 3rd house?
Also, Aries MC is such a great placement. It adds fire to your public life.
We have a Venus conjunction.

Hold the phone - I think you may be on to something. There's no proven data or anything but look at the amount of gay Geminis in the public eye:
Neil & David, Tom & Lance, Anderson Cooper, Andy Cohen, Boy George, EJ Johnson, Zachary Quinto - just to name a few off the top of my head.
All are Geminis. I know a lot of gay Aquarians too. Something must be going on here. The air signs (especially Gemini and Aquarius) and Scorpio are the gayest signs, in my opinion.

I feel like Cancer, Libra, Virgo and Taurus are the friendliest signs.
The meanest signs are Capricorn, Aquarius, Scorpio and Aries.
The rest are somewhere in between.

I find Virgoans quite serious and great at organising. But I only know a few.

Angelina Jolie is a textbook Cancer ascendant with Aries midheaven.
The way she'll do anything for her children and manage to dominate in her field of work simultaneously. 
She has Venus conjunct ASC too.

Your chart has zero water planets and moon in Taurus = emotionally headstrong or few emotions at all but you do have moon conjunct mercury, which could either manifest itself as an emotional speaker or as 'emotionally critical' (thinking with the head) - it can go either way and depends on the person, environment, etc.
You have sooo much Mercury (ruling planet of Gemini/Virgo: communication) influence in your chart and it's kind of insane! Fortunately, though, you have planets in Taurus, which can help keep your feet on the ground.
Wait, though! You have SUN CONJUNCT MIDHEAVEN which could serve as a godsend if you're striving to be a public figure.
Is your sun in the 9th house?
When/if you have time, you should Google these aspects:

Sounds interesting.  I must confess I am very stubborn and I always thought Geminis weren't seen as stubborn signs but thanks for clearing up that it's because of my Taurus moon

So Katy Perry's chart was updated on Astrotheme recently (I don't know when exactly, but sometime within the past month) with a new birth time.
Apparently she has Sun, Moon, Mercury, Saturn, Pluto and ASC. all in Scorpio with 4 planets (Moon, Mercury, Saturn and Venus) in the first house.
I don't know where this new birth time came from but it has an AA rating on Astrodatabank.

Yeah, Taurus mooners can sometimes be possessive of their feelings and don't have all that many emotional problems, because the moon is exalted there. It's all about feeling secure, balanced and maintaining a sense of stability.
The houses that your planets are in add more substance and flavour to your chart.
You can find that out here, by clicking 'Advanced Options'. I'd use Placidus, since it seems to be the most accurate.

Tbh, I feel like I'm so emotionally detached. Like, I can give the best advice and my friends often come to me for consolation and advice, but I never open up when it comes to my own problems.
My Sun Sign is in House X according to this chart.
