I think you're right, because I was eating around 1,400 calories and I was defintely losing weight but now ever since I started eating 2,500 calories, I've been maintaining my weight which is NOT what I want.

 Your net total should be around 1500. Meaning if you eat 1000 calories, workout and burn 500, you should eat 1000 more calories by the end of the day.
 
And as long as your getting a good amount of protein, you shouldn't feel starved either.

 1500 calories is NOT a healthy amount of calories for someone who's 190 lbs and 6ft2.

 Yes! Definitely. The key thing to loosing weight is creating a calorie deficit. Basically you want to use and burn more calories, than you eat. So when you don't get enough calories from food, your body burns your fat for energy as it can't get enough energy from your food. E.g, Your body uses 2200 calories a day, but you only eat 1500, thats a deficit of 700 calories, all those 700 calories will be taken from your fat.
 
To loose 1lb of fat, you need to "loose" or create a deficit of about 3500 calories. So If your body uses 2200 calories a day but you only eat 1500 a day, in 5 days you'll loose a 1lb of fat theoretically. (700x5=3500)
 
The reason you're not loosing weight is because you're eating too much. Your body will only use/burn fat when its not getting enough energy through food. So if you're eating a lot, there's no reason for it to burn fat.
 
And the reason you aren't loosing weight because you're "Gaining muscle" isn't true. Whilst eating at a calorie surplus (eating more food/calories than you need) and doing a heavy weightlifting routine, the most muscle you can put a week is 0.5-0.25lb a week. 
 
Basically the most important thing when it comes to loosing weight:  calories deficit.

 Yeah, at 6'2 190lb, moderately active, you'll burn 2650 calories a day according to this calculator.

So eating 2000 calories a day theoretically you'll loose slightly over a lb a week.
 
If you've been eating 2500 calories a day, it would mean you'd be loosing about 0.25lb a week, which probably explains why you haven't been seeing the results you want. So just cut down to 2000 calories daily.

 You'll most definitely see quick results with that but don't be surprised when you get hungry and suddenly go on binges because that's what happens when you burn too many calories.

 I think you may be getting a little confused. 
 
You eat 2000, then burn about 2650 calories (this includes exercise) so:
 
2000-2650=-650 
 
So out of the 2650 calories you burn a day,  500 will be burnt through exercise you do but your body also burns calories when breathing, carrying out metabolic function just resting etc, you're burning calories all the time   just a lot more during exercise.

 Alright, I'm eating 2,000 calories and burning 200-300 calories in exercise. I cutted Peanut Butter, Avocado, and those healthy processed Granola bars outta my diet. 
 
The only processed food I'm having is Almond Milk

 How incorrect   
Yes, doing a bulking phase can gain about 0.5 of muscle a week.  But the user wasn't gaining nor losing weight.  There will be a small increase in muscle mass and a small decrease in body fat if the user correctly established their calorie intake.

 Cutting out dairy is good, but almond milk is dairy-free so you can keep drinking it. Just make sure you get one that doesn't have added sugar.

 You could be underestimating the calories you're eating and/or you're overestimating the calories you're burning with exercise, both are really common   
Weight loss isn't linear tho, you could be retaining water weight even tho you've lost fat. If your clothes feel looser than before than you're losing fat regardless of what the scale says

 Breakfast: 5 white eggs, cooked vegetables   
Lunch: Fruit Salad   
Dinner: Brown Rice, 3 white eggs, 4 oz. Chicken, Vegetables, and Avocado.   
I kinda struggled to eat that, it was nasty, I miss my junk food
