They don't miss "the old Gaga", they miss the excitement and freshness of watching a new phenomenon. Every day was something new with her - the sounds, the costumes, the stunts, the videos, the persona etc.
Lady Gaga then was just as - if not more - pretentious and artsy as now. Her music is still fame tinged dance/pop with catchy hooks. She's actually less annoying as a person now without the weird voices, awkward interviews and general distantness.
It's not even like her music now is subpar to the TF (SD, DWUW, Ap, G.U.Y etc. would be stand outs on that album), it's just that the feeling of freshness has gone. Just like she is unlikely to shock us now that she's bled to death on stage, worn a meat dress and walked the red carpet in an egg...it's very hard for her to wow us with more pop/dance now.
