Why haven't 100% encounter rates horde EV hotspots been discovered yet.
I keep finding Cubchoo hordes instead of Vanillite and I accidentally killed one
You asked if you kept training on one stat would it keep adding up on that stat, but you knew the max EV's for a single one was 252, so I don't understand your confusion. it's maxed out, there's no way to add more.

I knew the max EVs you get in one stat is 252 but I was wondering if you keep putting EVs in a maxed stat if they just go to waste, still deducting from your total EV count without benefiting you.

I'm 99% sure it just caps at 252 and doesn't waste any extra you put into it.
I'm so damn pressed. After the first few Zubat hordes I can only find Whismurr hordes now.
And doing it the traditional way because I can EV train my whole team with exp. share but now I might just try S.T.
