I have been grinding for hours and catching multiple Pokémon for decent natures. Also, I don't wanna go too far in the game, because my strategy guide isn't arriving until Saturday..

Pumpkaboo can be caught after the 6th gym, on Route 16 on Lv. 37.

Milotic isn't in the game. You can probably catch it after the main story though...

And no, they haven't although Pumpkaboos have been seen in different sizes apparently. But only Small size Gourgeist so far. Hope they get a few things to differentiate themselves.
The Pumpkaboos are on this list (you can't actually see any real difference though)
