I guess you don't read manga very often? SnK manga is sooo goood I'm reading from the start since I only read 33 -50 since the anime stopped at 33

Omg the manga after 33 is so fcking good So many twist and turns and action UGH. SO AWESOME. And yeah when you first read manga its sort of hard but you get use to it pretty quickly!

I always keep up with Naruto Bleach is ok its picking up but overall as a series Bleach is the sloppiest of the big three. I think Naruto sticks well to the storyline and does not jump all over the place.

What do you mean by serious. SnK is not serious it's better described as dark.
Anyway i suggest for you to check:
Monster - (this is what can be called serious)
Death Note
Darker than Black
Black Lagoon
Baccano! - it's starting quite slow or more precise you need watch like 3-4 series before starting to get in it
Durarara!! - from creators of Baccano!
Seirei no Moribito
Mushishi
Ookami to Koushinryou (aka Spice and Wolf) - settings are like in SnK (middle age Europe type, but there is almost no fights)
Natsume Yuujinchou - (there are 4 separate series this is name of first. also its more fantasy/SoL type anime but sometimes it can get quite serious)

Spice and Wolf is highly recommended slice of life/romance/fantasy anime! I just enjoyed the two seasons of the anime and the light novels as well! gosh! I love the cuteness of holo and lawrence! i love the romance and you'll also learn economics at the same time!

Shin Sekai Yori - It has a lot of twists in the story! the first 6 episodes are kinda dreary but the next episodes are awesome. I love the revelations here in this anime! Hope you'll like it!

Yes, Holo is probably one best female main character in anime ever. I probably need to pick novels, although i still hope for 3rd season who will cover LN ending

Shin Sekai Yori - i watched it but didn't like it at all. Although story was good, but there was some moments that was really off-putting for me, i was close from dropping series several times.
Claymore - good series but they screwed everything with original ending, that was complete crap. It is one of few manga that i still follow, it's been 7 years i think since i started to read it.
Elfen Lead is good, if you don't have anything against lot of blood.
Blood+ it was good but for me nothing out of ordinary, that would made me recommend it
Gunslinger Girls is one of best series, but in same time it was one of series that made me feel sick when past of some girls was revealed, and since i spoiled myself manga ending and it didn't helped to light the mood.
