I haven't checked out everything yet, I'll do that in a couple hours when I play again, but I did go to the hair salon and there are a lot of different haircuts and 4 different beards you can get. I also went to one of the Pay n Sprays and there were a TON of options, like every part of the vehicle is upgradable including the engine etc, or simply repair the vehicle. Repairing was free for me... although I'm not sure that's because it was part of a mission or if it really is free. I'll check it out again.

It isn't a major difference but it is less "heavy". A good comparison I heard is that GTA IV was like driving a boat and GTA V is like driving a car. Turning is more sensitive and cars damage less easily. Also, when you go over steep hills in roads, cars move around in the air more but you can control how they move.
