They migrate to the warmer states (south) in the fall/winter, return to their place of origin (Utah zoo) in the warmer months. With no natural predators in North America they could probably grow a lot in numbers as well.

That Giraffe scene caught me off guard though because before that there was all this drama, and I was expecting to see a hoard of clickers or something.
Also if you look in Joel's daughter's room at the beginning of the game, there is a plush giraffe.

I didn't notice them my first time around, but on my second I did. I love easter eggs. I wish there was an easter egg about Uncharted 4 though.
