Don't believe her.
To be honest, I really don't think she'll remain a dance/pop act forever. She's having fun and playing the game so far, but as time goes by she'll probably get sick of it and want to move on. There's only so long she'll put up compromising her ideas for being top 40 friendly.
She tried to experiment beyond with BTW (only 3 albums in) and if that had gone more her way, I daresay ARTPOP would be more techno-rock and less electro-pop. She'll try and please us for now while she's still solidifying her career, but I wouldn't expect her to cave so easily to demand in future.

Electric Chapel is a really good example of how it can be done

She's the only one I can see legitimately pulling off rock without it being Kelly Clarkson/Avril Lavigne-esque. She's got the glam/rock vibes and metal attitude. Hell, the BTW era visuals were pretty 80s metal/glam.
If you changed the production of Hair, Judas etc., you'd have rock and metal numbers. Then there's You & I and Electric Chapel. The Edge of Glory was like a throwback stadium rock number, too. It's really not a huge leap for her, just production alteration.
