I don't have the album cover, and I can't edit it unless I convert it (works, but only once per convert). Is there any software that can override protections and edit them, I found something that edits text tags, but I need a solution for pics too

Hmm, maybe the mp3 is a read-only file.

Try to start iTunes in Administrator Mode (left-click on the icon, and then click on RUN AS ADMINISTRATOR) after that the id3 editor should work fine.

This has worked for me.
