Based on my personal experience, it actually depends on how good the book is. If I find it really interesting, then I can't put it down and I keep going because I want to know what happens next. Good books are able to be read at quite a fast rate because they're captivating and intriguing. If a book is taking a really long time, then you probably aren't finding it very enjoyable though.
It depends. It took me a day and a half to read Harry Potter and the Deathly Hallows, yet it took me like two weeks to read Looking For Alaska.
It's not even about how interested I am in the book. I know I read Hush Hush in less than a day and The Hunger Games in about 3 or 4...and I thought Hush Hush was a terrible book while The Hunger Games was awesome.
It's really random, I guess. Sometimes I'm just better focused than other times. lol
