I think it's kinda cool that some Pokemon don't evolve to or from other Pokemon. Sometimes I feel that some evolutions are pointless.

But if I had to pick one, it would be Pinsir. Why? Because he popped into my head

Probably something stupid like an entire coral reef. Look what they did with that ice cream Pokemon. Not only did they make an ice cream Pokemon but it evolves into like conjoined ice creams.
