This is why it's good to install one of those apps where you can remotely erase the contents of your phone.. and/or track it and get the authorities involved. I backup all my photos on da cloud and keep my phone in close proximity to me [I also am not in a bad area where there's thieves, though anything can happen]

Amazing documentary
My Macbook and tablet were stolen from my hotel room in Paris this May, and I had all my information, all my photos (some were very private and sexual) on them
It's a disgusting feeling. I could not really enjoy the rest of my European voyage after Paris.
I went to a police station, gave them the serial numbers, tried to track down the MacBook and tablet with Find My Mac app, but nothing worked. I REALLY hope that the stealer erased everything on my stolen devices. However, I got an e-mail from Google that my tablet was used to sign in to my account in Paris in November I changed my passwords, but the photos are still there if they didn't delete them.....
I'm actually going to message the Paris police now to see if they have something new on my report....

The problem is that Find My iPhone/iPad/iPod or whatever can only work if there's a data connection.

Let's use the iPhone as the example. If you have control center accessible from the lock screen, you can turn on airplane mode thus rendering Find My iPhone useless. If they remove the SIM card, that will also remove cellular data because the phone won't have signal or any carrier information. Which is what happened to the guy. Then the thief used a site to bypass the activation lock (a service Apple provides so that an iPhone can't be used with another Apple ID).

That's why I advocate for SIM cards to be built into the phone and no easily removed. It's also important to make sure you have a pin on your SIM card but that also comes with drawbacks.

But the best thing you can do is to always have a passcode on your phone. I use a custom passcode that's more than 6 digits. I have Touch ID so I rarely have to enter the full thing.
