I feel like some have changed me just in terms of my actual goals and aspirations, more so than me as a person. But then again, if it affected what I wanted to do with my life then I guess it did change me as a person after all. I would say the two that definitely did that were Scream and Spring Breakers. (Weird, I know.)
Scream is by far my favorite movie. I love everything about it. Watching it for the first time was an amazing experience. I loved the story, the guessing game, and the way in which the movie would spell out what you were thinking and turn it on its head. I loved the satirical nature of it and the way in which it both honored horror movies and critiqued them.
Spring Breakers is more of an aesthetic thing. I love the way that movie is shot. It's beautiful to look at. The style, the colors, the music, and the editing are what make it such a feat in my opinion. Harmony Korine wanted it to feel like a pop music video that was also reminiscent of a drug trip...the way you might remember things in sort of fragmented pieces. I think they definitely achieved that goal.
Scream made me confident that I wanted to pursue film as a major in college and Spring Breakers reaffirmed my love for stylistic movies and creative editing. They both have influenced me in terms of what I love, career goals, etc.
I also think Garden State changed me as a person. I know that's a very mid-00's middle school thing to say (which is exactly when I saw it) but at the time, it definitely made a lasting impact on me.
I'm sure there's more.
