Speaking of "I Miss You," this probably sounds really stupid, but I'm going to ask anyways.... Obviously the song is about intimacy and sex, but what I don't get is how she misses the person she's addressing in the song (obviously Simon). Like, is the song about her missing their intimacy when he's away or what? I just never understood the whole concept of her missing him in the song if the rest of it is about sex.

I think he means that Adele shouldn't fear what he thinks about her songs. As in, Simon won't stop Adele from writing whatever she wants, even if the songs paint him in a bad light (which they really don't anyway, at least not yet).
We all know I Miss You is about Simon's you-know-what
I always got the impression that what was meant by that quote was that Simon didn't want his opinion to affect Adele's music. Right after she says that, she says, "He's fine with it." I believe she was referring to the fact that she wrote about their relationship, and he was telling her it was alright and that she didn't need his approval to write about him. Does that make sense?
So... Without sounding stupid, "I Miss You" is basically about Adele being, for lack of a better word, thirsty?
