You're right. It's not supposed to be easy. We all get that.
With that said, people on reality shows get whisked away to a house or conference rooms where they have dedicated time to work together. They also often win a cash prize for themselves or a charity at the end...
We're not winning a cash prize. We're in it to have fun, so if it's not fun because the time allotted doesn't allow for us to give respect to the process, then extensions can be a necessary part of the experience.
Also, part of me feels like your words are coming from the high of having won the last challenge. It's too early in the game to be this cocky.

And there's a difference between just being challenging and being near-impossible due to time constraints. Not everyone has the same amount of available time, and thus, they're at a disadvantage that gets evened out by the extension.
