The same can be said about many pan-racial and ethnic terms. They are just collective terms used to describe people.

It's because of the color of their skin whereas Asians have more diversity in their skin color. I believe the diversity in Asia is also more easily noticeable. For example, you will never mistake a South Asian for an East Asian.
Regardless, there is still a problem with grouping different ethnic groups with a collective term meant to describe all the inhabitants of a continent. Most Americans assume Asian and Asian American mean East Asian. I'm sure there are ignorant Americans that will actually tell a South Asian that he or she isn't Asian, because they only associate East Asians with Asia.
