I'd love to know how switching from a genre to a more popular genre, among other 'risks', is supposedly 'risky'

How is expanding/switching from one popular genre (in the US, anyway) with loyal fans to the most broad and popular genre out there (pop, it's called pop because it's popular) a risk?

That's almost like saying an independant artist is taking a risk by signing to a major label because they might lose their indie fans, but even then that's a bad example because Taylor's country fanbase is hardly comparable to a few indie fans.

Has Taylor taken any risks I am confused by the poll to be honest.

Bad Blood is her biggest risk and its a Bad Song.

Katy's Career launched off a risky single and video for "I Kissed A Girl"

They are both kinda tame though when it comes to risks

Taylor released "Out Of The Woods" and "New Romantics" those were risks I forgot about

a song that already charted well as a promo single and a fan-favourite are not risks. they just didn't chart well.

ET is actually a good song so I dont find it a risk

In a way, you're right. It was risky for her to feature a rapper on one of her songs. She could have lost a lot of her fanbase.
