I could care less vs I couldn't care less
I mean...
The saying should be "I COULDN'T care less" right?
Meaning you're already at the lowest point of caring.

Correct. Saying "I could care less" means that you do care, but you're capable of caring less.

I couldn't care less is what people say, but it should be I could care less.

Everyone knows that they mean the same thing, even if the former is incorrect.
It annoys me too, but whatever.

I fight the urge to correct people every time I hear them say "I could care less."

It's one of the the few times when I get annoyed by speech errors.
Most of the time I'm not pedantic, but Jesus
it should be really easy to figure out that what you're saying is wrong
Maybe it's an American thing cause I don't see it that much where I live

Either is fine. "I could care less" is short for "I could care less... but I don't" so it has the same meaning.
