As a Christian, some of the OT laws are definitely... a little extreme

Though based on New Testament, they seem to be at least somewhat inaccurate with God's will and more there as a historical basis, as can be seen in "Thou who has not sinned shall throw the first stone." (which I think follows Leviticus to the letter, technically, but completely goes against the spirit of Christianity and basically the entire New Testament) I don't think anything in the New Testament advocates for murdering those who don't follow teachings (or starting Holy Wars), and it has countless passages saying the opposite. Though I'm not a brilliant biblical scholar and could be wrong, but the impression I got from the NT is that you're really NOT supposed to follow Leviticus to the letter. At all.
I also know the first five books of the bible (Leviticus being among them) were originally committed to memory and not written down, which could mean things got copied down incorrectly and throws more credence to the idea we're not meant to follow it to the letter if it something seems to contradict other parts of the bible and that it is there partially for important historical context.
These are all mad ramblings and I could be totally wrong though. It's more me speculating and thinking of possible answers than having exact ones. As said, I'm no bible scholar and I'm certainly not God, so I can't give a definitive answer. I can just try to reason things through and make sense of what's there
I can't speak for Judaism, seeing as I have little familiarity with it (I know there are definitely books shared between both, but)
