Well skin color is polygenic. So most of the time you do get a mix between your parents (to varying degrees) but that's not always the case.
For example if your parents have the alleles AaBb and AaBb with the capital letters being dominant and the lower case being recessive, crossing them will give you many combinations like
AaBb
AABB
aabb
Most combinations will give you the AaBb cross (hence why skin color is usually a mix of the parents) but there are times where you can get a new combination that neither parent has (like AABB) and with crossing over that number of differences rises
So in layman's terms, skin color is dependent on many factors and no mixed person is always between the color of parents
