Any organisation can choose any words to be used in their name, but anyone else can choose other words to refer to them. Nicknames like the Huns, the Krauts, the Boche, the Jerry, the Fritz,... were used for the Germans.
The Arabs call them Daesh, sounding a lot like a few other negative terms or swear words in Arabic. By using the same words as the Arabs, France shows that it's their struggle/war in the first place. France can assist them in their own struggle/war instead of making it looks like the crusaders are coming to change their world.
It's this political subtlety that makes Europeans more liked by other cultures than the cowboys from
Murica shooting first, asking later why nobody like them.
"Islamic State" is incorrect. 90+ % of the Islamic world don't want them and the term demonises the Muslims like there is a clash of cultures coming. While it's an internal conflict in the Middle East that tries to find more naive recruits from the West by trying to make the West hates their Muslim population. And they aren't a state.

Like Christians didn't have recent conflicts and peace walls keeping Catholics and Protestants apart are seen in cities everywhere in the West.
