No, she said it because it's true. And Sarah is definitely interested in acting, which is why she did Ringer and Crazy Ones. She's doing TV guest roles and voice acting because that's what she's getting now.
As for Kate Beckinsale in Underworld, not a really good comparison. She started playing Selene as a 30-year-old and it's only been ten years. She's still believable in the role, but a 40-year-old Buffy and a 50-year-old Xena is not. Realistically, their characters would be dead by now. I think you're trying to hold onto the original actors for nostalgia reasons.
