Because people get shot/killed so frequently in movies that we've become desensitised to it. James Bond can shoot and kill 60 men in a Bond movie and no one in the audience even thinks "wow...60 families lives have just been completely ruined forever."
Gun deaths are instant. So in movies, it's not scary, but in real life you're confronted with the possibility of dying at any second. Whereas knives in movies usually mean gore and a slow death, which is uncomfortable to watch and way scarier.
