I actually don't eat much meat though (only chicken, nothing else) so I just need some motivation/tips for cutting off chicken too. And preferably tips on how I can improve my vegetable intake despite being picky!

I've never been a major fan of vegetables either and I'm vegetarian too. Of course I get the "so what DO you eat?!" question off people a lot but really there are so many more foods. Pasta, chickpeas, couscous, tofu, quorn, rice, lentils for example. The only meat I really ate was turkey/chicken anyway when I wasn't a vegetarian so it didn't effect me at all and I've never missed meat once, I think it's disgusting. If you wanna try and eat vegetables, just try to include them in a dish; like vegetable lasagna/wellington/curry or whatever and you will barely even taste them.

Really? From my experience vegetarian food is much cheaper, anything including meat is always more expensive by a few pounds or so.
