Because iTunes doesn't appreciate albums not appearing in it.

Why is your iTunes outdated? Try upgrading and see if it works.

it's because you updated your iPhone and started using Apple Music, they need to fix it (and you need to update your iTunes)

Update your iTunes version (hopefully it is compatible with your Windows version) and make sure your syncing options are set up properly in the Summary page.
