I've ridden horses since I was a child and they have such a beautiful spirit, I can't imagine them talking about anything other than how happy they feel when galloping in the countryside
Chickens would be like Social activist on not to eat animals and stuff. We'd all feel guilty for what we've done to them over the years and stop but a few would continue eating them.
Dolphins would probably sound more educated than the average human tbh.
