I remember always freaking out about the pixel-y moments in avi-making when I first began.
It's totally normal. No one really notices (I think that the blurry moments you're worried about are hardly noticeable).
Any gif that has that many colors and that much movement will not come out particularly crisp.

Resizing and repixelating is always going to affect the GIF a little bit
It sucks when you really concentrate on it, though; but we're all in the same boat!
It also sucks because Photoshop makes it look like the cleanest, most beautiful thing when you're testing it...
