Most artist work 2 years to release an album just see the time between releases most artist take to record an album.

Of course they're going to say that. Syco admitting upfront that their artist left their biggest group act and then got poached from them isn't a good look. It's still possible that Zayn is planning on leaving Syco in the near future. He can always be bought out if necessary.

Why would dropping the label matter?

A contract is a contract. If his contract stated that he cannot release solo music for a certain amount of time, that will hold unless the label specifically releases him from that provision. Which they have no incentive to do, especially if he is leaving.
