Rachel showed a lot of character development throughout the series. She may have been spoiled in the beginning but over time she became more down to earth and caring. Keep in mind, her sister Jill said that their dad is proud of Rachel, but not the others. And she was very protective of her daughter too, especially when her other sister disrespected her.
You don't see a lot of character development in Ross. Just him using the "we were on a break" excuse for cheating on Rachel and not accepting responsibility, becoming jealous over her male coworker, interrupting work when Rachel had to work through anniversary to make a deadline, didn't annull the marriage because he was too much of a ***** to admit he had to divorce three times...the list goes on.
If anything, his character development was more negative than positive. So I can see why a lot of people don't really like him, including me.
