The Catholic Church holds that Adam and Eve were literal people. They were the first ENSOULED humans as told in the second chapter of Genesis. Being the first to be endowed with a soul, they were also the first to disobey God and commit a sin. The Bible is chronicling the history of the fall of man which began with Adam and Eve, and not the origin of the human race. There were obviously other humans that coexisted with Adam and Eve, otherwise Cain could not have had a wife, and the mention of other people from whom God protected him.
