Hrm. Legit always thought the n-word, at least as a slur, was mostly an Americanism. Didn't know it had widespread offensive connotations outside North America.
She's saying when she goes to these extraordinarily visual places (an art museum, beautiful landscape, etc), there are people talking loudly, or playing music out loud (versus taking in what their eyes can see), basically making noise.
"Sound is the ****** of the world" meaning the bad/worst/terrible part of the world.

The original Lennon song was intended to describe "women's subservience to men and male chauvinism across all cultures."
Björk's re-working of the phrase is probably meant as "sound/music" has become so commercialized and trivialized that it is losing its artistic value/message.
I highly doubt she's a racist (she's always seemed really genuine and nice). Though regardless of whether it's a quote or not she shouldn't have said that word. There are VERY few contexts where it's appropriate for a white person to say it and this isn't one of them.
She should have used a different word to avoid offending people, but what she was saying was in reference to another quote (not her own words).
Even if you DO apply this to black people, she's saying that sound is underappreciated and what not - just like black people. Still not racist but rather a good thing.
I'm pretty sure you are desperately seeking a reason to be offended. Björk is not the kind of human being that discriminates so if you could stop doing the most about this, would be great.
