I really don't care either way, I've played games at 60fps and they make me dizzy if anything.
The demo build they had at PS Experience was running at 37fps and locked to 30, and since optimization is basically the last step of development, they still have plenty of time to push it to 60 if they so choose.
Graphics >>>> 60fps, especially for a game like Uncharted where it isn't even necessary.

If the game was made by any other developer it wouldn't be an issue but Naughty Dog will always be Sony's developer that has to push two things: graphics and action. If they're not putting out cutting edge graphics then they'd get dragged to the pits. If 30fps means much better graphics then that's what they'll do.
