I'm assuming the $1.61 is the price on iTunes for the consumer, but iTunes takes a certain cut of that, right?

From my understanding the iTunes store takes a 30% cut for music which is the same as they charge for iOS apps.
I've seen some figures where an artist calculated 29.3% for iTunes and for Amazon downloads 28.5%. Bandcamp take 15%, so if you want to support a smaller artist, buy the music from Bandcamp.
Once the 30% is taken by iTunes, the rest of the money goes to the label/rights holder and if the artist is with a major label, the record company takes a big part of that before it gets split between primary artists, featured artists, songwriters and others.
The same situation exists for Spotify as that $6 per 1000 streams going to rights holders, not direct to the artist.
