Well, having seen the movie about a month ago, I can't recount the details as well as I'd like to but here is what I remember off the top of my head.
Nobody would ever come back to her. But did he even have a choice though? She was pregnant, and we've all seen how devious she can be. You can fully trust that Nick hated her with all his guts when she came back, but he could not do anything about it. The whole point of the ending was not to produce a happy ending or an unexpected ending. In fact, the whole thing was just the most logical and imminent ending Gillian could think of. Nick is too dumb/nonchalant to come out victorious and Amy is too tenacious.
The poor people did not even recognize her when she was in that motel. Remember that she was in disguise during her whole stay there. In my opinion, their only role in the movie is to show that Amy is not actually as infallible and/or invincible as she thinks she is.
Why would they do that? The police was only interested in the cameras during the day of the event (her getting raped). I think what you're not getting is that a girl that has been gone for a while now and that has been very recently "raped" is not going to get many eyebrows raised. The natural reaction of the people would be to see her as a victim and thus not look too much into things. This applies to your next question too, even though the sequence of events in the book is a bit different and a bit clearer as well.
I don't know why they chose the casino (could probably answer that if I watch the movie again) but it's not like any camera footage of her in the casino was ever used.
Finally, as for the parents, they may not seem as important in the movie but they actually play a vital role (imo) in the book. They are at first very confident about Nick's innocence but they turn on him as soon as everyone else does. It's ironic because they were the ones who made Amy the twisted character that she became. She has been living her whole life trying to live up to her parent's version of their daughter which can be psychologically consuming to a great extent. So, I think their fickle attitude towards their son-in-law is just aimed at highlighting their whole "buffoonery" in life in general.
As for the reason she came back, it's a bit of both actually. The interview remionisced her of the old days (back when her diary entries were still truthful), but it's also because she realized that she had not thought it through. The way Desi was suffocating her and the robbery gave her a little bit of a (much needed) slap back into reality.
Sorry for the lengthy response but you will not criticize Gillian in front of me.
