If the eligible reviews give grades (A+ - F-) or stars, there's a direct conversion as to what score Metacritic assigns the reviews which you can see on the page I linked.
For reviews that don't assign grades or stars, yes, Metacritic reads the review, analyzes what was said, and assigns a score based on the analysis.
