You have to remember that a lot of songs are not grammatically correct and it is not that the artist is trying to be grammatically incorrect. Perhaps a certain word fits the rhythm better. There is a really old song called "Ain't She Sweet". They couldn't say "Isn't she sweet" because that would destroy the rhythm, although "Ain't" is not grammatically correct. Also, some songs use slang and everyday language. to reflect everyday speaking. Even though Taylor is a lyrical genius, perhaps, she has her reasons for changing the grammar, but I am sure it is not because she is illiterate.

I just thought that if you use "this" then it is singular and you should use "was", same on "these" with "were"

I am not sure, here, but in the English language, there is the subjunctive case, where, if you are 'speculating or stating something opposite to what is believed' then you would use the past tense with a singular pronoun or noun: "If I were you, I would do ..." (But, I am not you) or "If it were to rain today, then..." (But, it isn't raining).
But, I think, in everyday language it might not really matter, so you could say "If I was you" or "If it was to rain...", etc.
