Like...they need to be catered for. Specifying food and drink that fits dietary requirements makes everyones lives easier. The decoration of backstage can get elaborate, but that is their dressing room and home away from home. I'd imagine they have the same contents shipped alongside everything else, and the rider is just a checklist to make sure all is in place at each venue.
