That's because Samsung's camera increases the Saturation which makes any photo look better, but doesn't actually mean it takes the best photo.
In the filter orientated universe, the S5 will seem to take a better photo. But from a photographers prospective it doesn't take as good as a photo as you'd think.
For example the 5S captures a larger and clearer photo (far left) but the Galaxy S5 (middle) ups the saturation to provide a better looking photo but the mountains and detail are lost (look at the bush for example).
A photographer will edit the photo later. What they want to shoot is detail and clarity.
Which is why the Lumia 1020 wins.
But out of S5 vs 5S, clarity + detail + image size win. Having richer colour doesn't mean much when a photographer will edit things later
