It is not always proper to mail legal documents. They do if cases are in rem, are they have reason to believe that they are presently staying at their home. Moreover, a mailing of legal documents only counts as being served if that person is a citizen of the place where they were served. I think Selena still retains her Texas citizenship (something she can do while living in CA), and therefore, mailing would be improper. Therefore, she would have to be personally served.
Also, you can only be personally served in a state where the lawsuit will occur. Therefore, if someone is trying to sue you in Texas, and you're a citizen of missouri, and Missouri doesn't have some weird long arm statute, you can leave Texas and not have a fear of them forcing you into trial in that state. (Now, you can still be found guilty in that state, but then the state would have to request you to be extradited, which your state can refuse.)

Edit: Also in the matter of some cases, like In Rem mentioned earlier, mailing documents is sufficient to give you notice and it doesn't matter if you personally received them or not.
