They will end the show when they feel it's right. GRRM is involved heavily in the production and also writes entire episodes for the show. They are not going to do anything messy with the way they'll release the story and they're planning to end it the same way as the book series - Martin has told the two creators how he wants to end it already. There aren't going to be different endings.
