Along with people already stated, Toni Braxton.

Her songs can be vocally challenging, but more importantly her enunciation makes it 5x more difficult.

You can be bopping to one of her songs and then she starts her mumblesinging

Mariah for obvious reasons, but Bjork because of how unique her voice is, it's very hard to mimic the sounds she makes.

Singing along to Demi can also be a challenge, due to all of the belting required. "Heart Attack" is damn near impossible.

You have to have a good voice to be able to pull off a song like that. I can nail that song, really, I don't find it that hard. The hard part is that I have a big and loud voice and I'm always afraid of being too loud and I try to hold back a little, which can make it a bit tougher to reach some of the notes Demi does. The hardest part to sing from that song is at the end, right before she sings the final "I think I'd have a heart attack." She's harmonizing with herself, and she goes higher up and sings, "Oh, I think I'd have a heart attack!" and it's really tough to hit, but if you have the right voice you can do it. I found "Shouldn't Come Back" a bit tougher to sing.
