It stands for ''Individual Values'' and it's different between every Pokemon. A stat can have a maximum of 31 and minimum of 0. It can be pass down from the parents to the baby using the Power items (like Anklet and the others I forgot ). I don't really do that either tbh, I just choose the nature and go with it in most cases. But the FS Pokemon can have 2 maxed out IV's so it's easier to get the ''Perfect Pokemon'' aka all IV's maxed out at 31.
