Like most Reality Shows it's most likely real, but most of what they show is over-exaggerated / staged parts.

Most aspects of it are real but a lot of it is really produced
In the movie I highly doubt Max was interested in the person who was talking to, it was just for the movie. But I do think the Catfish was real
I went to one of the after shows and Nev and Max are really nice guys
